Don't you just love it when the sun is out? I got to spend my special day in Malta - sure some wind still occured so it's not totally hot to stay without a cardigan/jacket - but it just makes everything so much more pleasant. All I needed on my day was just some sunshine and some quality time with the people I love, which is exactly what I got to do. My grandparents organised a family lunch so that I could celebrate with everyone - considering in a week I don't get to see everyone this was perfect occassion to catch up/ say bye. I wanted to stay dressed casual especially when it comes to grandads cooking, that top button of your trousers you'll either pop it open or it will pop itself open and i mean it - yet, being the birthday girl I still wanted to dress the part and look remotely presentable. This lightweight maxi cardigan fits the part perfectly - it's super cosy yet still chic enough to compliment my ensemble. This was one of the best bargains as I had got it in the clearance sale for just £10. I followed my day by going round the shopping centre with my mum and followed up by meeting my good friend for a sushi overload to be exact and perhaps the same amount of wine. It's fun celebrating being a year older.
As I sit here being pensive and drinking my cup of coffee, like I do religiously every morning. I ask myself how is it that no matter how often you follow the same regimen, life and the world around you is still changing in the blink of an eye. You wake up one day - and it's not the same world you were living the day before. One minute you are on a path where you have certain things, and put your faith into it and the next you find yourself starting from scratch, on your own, with different people in your life, with a different direction and most scarily not knowing what your next move is. Change is clearly inevitable - I'm starting to realise that it is out of our control and that at the end change is the only constant in this twisted beautiful life of ours.
Loss is a part of life which as much as we dread and try to avoid is something that we all endure at some point (and many points). Daily, someone around us is experiencing it, be it from a lover, a friend, family member or even a loved animal. It makes you realise how precious our time is and the time of others, and that we should make the most of it and not take anything for granted because before we know it it vividly all becomes a memory.
2017 has definitely been the year where most change has happened, and I have dealt with a new chapter in my life. With just three months in, so much has happened already - which frightens me to think that there is another 9 months to go this year. At first, (and possibly still) I was worried with where this year would take me, and what was next on the agenda. However, I'm slowly coming to terms with accepting that it is okay to not know what the next step is and to just let life play it's course and take you by surprise for the good and the bad. It's unavoidable - the only thing that can be done at this stage, is the approach we choose to take. I am someone usually, very structured and organised - I am a planner. I like to know what is in store for me that day, what meals I am going to cook, what is going to happen on my holiday next week - but the last month every thing has been what I would call in my world 'upside down' ; living spontaneously, not knowing what my day has in store for me, not knowing what to eat. Somehow I feel like I'm slowly becoming stress free just by going with the rhythm of things, sure it's nice to be organised and I think I can never take the control freak out of me but I feel like just by taking the day as it comes, has made me enjoy life somewhat more. Everything is as it should be, what will be will find it's way and everything will fall into place one way or another. The heart will always find a way to heal itself, it's our minds that we have to take care of.
I never quite understood being in the moment and living in the moment up until the last few months. With meditation and yoga it has definitely kept me on my feet and kept my sanity, but it also has helped me to not dwell on the past, think about the future and just enjoy your surrounding at that given time - sure it's easier said than done but applying this to my everyday life has made me realise that it's the only way you can truly take in life, and all the positive around you. I'm sure there'd be a bit of negativity lingering on in the background, but it doesn't matter because you find a way to foresee it. It's okay to be scared, it's okay to be afraid of loss, it's a part of life that we have to take on and somewhat, makes this world so beautiful that we have something worth living for and/or got to experience.

I was craving something warm for lunch, the weather has been super dull and rainy for the last three days here in London and it just had to be when I wasn't working. Tomorrow the sun is supposed to re - appear and guess what.. It's when I have to go back to work - of course that's the case! I wanted some form of comfort food today for lunch and I thought that making a stir-fry would just do it. There is something about stir-fries which are so yummy and diverse, you can literally add any form of protein and any form of veggies, and I do mean anything. It's great when you want to get rid of certain food groups in your fridge. I've also done stir-fries with salmon in the past, and more meat based with either chicken or ginger beef which is also a really nice recipe which I might add to the blog down the line but for now let's just focus on this dish - - this recipe is with tofu. Tofu doesn't appeal to everyone and probably right now it might have stopped you guys from being interested or not as eager to see the recipe, although it's super tasty and I wouldn't recommend dissing it before trying, you can always alternate tofu for chicken which works quite nicely with the flavours and has already been tried & tested in the past so I give you my go ahead. Here are the simple ingredients that you will need.
INGREDIENTS:
- Frozen or fresh Sitr-fry veggies of your choice
(I always use a base with cabbage and peppers)
- Tofu
(Again any protein of your choice *)
- Mushrooms
- x2 cloves of garlic
- x3tbsp soy sauce
-x1tsp of sesame oil
- x1 tbsp of extra virgin olive oil
- x2 tbsp of water
Salt & pepper to taste
- Uncle Bens Wholegrain Rice
Does it ever happen that sometimes you buy so many veggies and they just go bad because you don't have time to consume them all in time. I decided to buy a stir fry mix with the veggies all chopped up this makes the process much faster and really at ease when you don't have time to stay prepping, usually I buy the frozen bag which lasts for longer but this time round I used up a fresh packet. I just love ,love cabbage in my stir-fries and this mix happened to be with cabbage and peppers, and I obviously added some mushrooms to the mix.
First off, adding crushed garlic to the pan before the oil is hot is a good way of letting the oil get infused by the garlic which will just enhance the flavours. Obviously you don't want to let the garlic burn so not long after add the mushrooms so that they start browning slightly. I didn't want to drench my shrooms in oil so instead I added some water just to help fasten the process.
Once the mushrooms seem to be cooking nicely and well on their way before the water evaporates completely, I decided to add in the tofu which I chopped up into pieces along with the veggies of your choice, the reason why I added the veggies once there was still some water let in the pan was again to help soften quicker and preventing them from burning. Cook for 1min or two.
It's time to add the soy - sauce and your sesame oil. I like the combination of the two especially in stir-fries. I believe that this dish or any stir fry for that matter cannot be complete without one or the other. The smell of sesame oil is just divine when cooking.
Then just allow for it to all cook and marinate together, and for the veggies to soak up the soy sauce. Try make sure to stir from time to time, so that the veggies don't burn. This in total should take less than five minutes of frying on high heat, you will know once it's done, your veggies would have wilted slightly and the peppers would be less crunchy, I like mine to still have an added crunch, but depending on your taste, cook for longer if you want the veg to cook thoroughly and to be softer.
& that's about it, add salt and pepper to taste as I did and you're ready to let it cool down or to eat straight away. I put mine on the side to allow my rice to cook to accompany this dish, however by the time the rice is cooked my mix is always reduced by half (guilty!) Quinoa or potatoes also suits this dish really well and makes it more of a substantial meal. I added the leftover mix in a tortilla wrap which is ready for my to go lunch tomorrow.
I always make a little more than the single portion as it keeps well and is amazing for leftovers or another night where you don't want to cook and have a sooper dooper meal ready ahead of time.
Why Hello there! remember me? Sorry for being MIA over the last month or I can actually say since last year (It surely feels like a year), it probably wasn't the best idea to have stopped blogging for a month especially as Live Elle is still so fresh and starting out but what can I say my hands have been tied and going through personal obstacles has definitely put me on a roller coaster the last few weeks. With this regard, I still have to wish all of you a Happy New Year and wish you all the health, love and success in each and one of you guys - my readers. Hey! it's still January so my wishes still counts. I myself have entered 2017 with a bang but I am here now and willing to give my 100% and don't intend on going anywhere. Or at least if i do share it with you wherever I do decide to go....I know that Paris is coming up next - HINT!
We all go through personal struggles at many points in our life. Sometimes they pass and other times they consume you, no matter the issue I genuinely believe that it's 10% the problem and 90% your attitude towards a situation. Trust me it's easier said than done and most of the time it's only once you take a look from the outside do you truly realise this and your actions. We all go through moments in our life where we are not OK and decide to just give up by throwing everything away along with our self-worth but in the process only makes us feel worst down the line. Sometimes you have to force yourself to get things done and although it might be a real struggle it will help in the long run. Here is a glimpse at what I do to to help me get through and might hopefully help inspire you guys and get an insight or two.
EXERCISE:

One of my new year's resolutions was to commit to yoga this year, whilst getting that flexibility going. I have always been a Pilates and Yoga kinda gal but lost touch of my love for it. It happens. holding on to this commitment couldn't have come at a better time as yoga is known to help reduce stress, focus on yourself due to meditation, learn to love yourself and deal with your emotions. (As well as feeling amazing and all stretched out after your practice.) I have incorporated it into my daily routine first thing before breakfast where I after get to enjoy my morning coffee outside in the crisp fresh air - pure bliss. Exercise in general be it yoga, Pilates, HIIT, cardio just brings out the endorphins which let's be honest when we're not our best, we all can do with some. You don't have to spend money to sign up at something which is what I believed for a long time, all I've been doing is showing up on the mat every single morning and has been making a small difference mentally & physically.
For yoga I usually follow Yoga With Adriene on YT. I really recommend her page. She has considered everyone and has done a practice available for no matter the situation one is in. Be it yoga for injury, fighting a cold, menstrual pains, detox, weight loss, depression, digestion, travelling and the list goes on. It's brilliant and pretty much leaves you with no excuse.
NUTRITION:
I for one have always been an emotional eater. It's honestly a nightmare because it is something that is uncontrollable, but again this is where yoga and meditation affects our everyday lives, I'm learning to master my own mind and allowing the right nutrients to take place. Although everything in moderation - I have been trying to limit my sugar intake (to an extent, chocolate can't just disappear out of my life), we all know sugar to be a big NO for when we want to shed a few pounds - but it's also the worst for when you're feeling blue. Did you know that although you might think sugar can help make you happy it will only make you feel more down and can put you in a worst mood once ingested. Being mindful of what you eat surprisingly can be better for your moral, despite the way you feel on a whole so it's an added bonus. Although these foods might not be our first choice, (lets be honest here the majority of us would choose a cookie other than a fruit in a time of need) by incorporating a lot of fruit and veggies into my diet as a result, has made me crave more fruits rather than sweets. I'm still getting my sugar fix through dates and mangoes especially. I love me some mango!
Being the weekend and actually being off (added bonus) I had more time to give myself some love this morning, and cook myself a nice brunch post-workout. I woke up late as I haven't been sleeping properly as of late, which happens when you are dealing with stress or have a lot on your mind. I knew I would need a bit more fuel to tackle the day and there was no better way to start than the mixture of savoury and sweet for brunch. Avocado on chia seed toast is just life add an egg and that's one of my fave meals right there. I had some Nutella left in the pantry - I added some on one of my chia seed toasts with added nuts and pumpkin seeds - exactly what I needed. What's important is to always listen to your body. if you want something have it.
Having time to finally enjoy lunches at home has made a world of a difference for me, now that my work has moved closer to my home, I no longer have to eat out or have on-the go sandwiches all the time - thank god for that! This buddha bowl is SO simple - yet SO delicious. I feel so good eating natural foods like this and my body just thanks me for it by keeping me energised & positive for longer.
You can add anything to your buddha bowl anything that is nutritious and fresh that is.
I just added mine with:
Baby Plum Tomatoes,
Baked Sweet Potatoes,
Raw celery,
Brown wholewheat giant couscous,
hummus,
drizzle of extra virgin olive-oil
Pink Himalayan sea salt.
GO OUT:
Is there such a thing as being an introvert whilst at the same time being an extrovert? Because if there is then that's what I am. I love to be outside, but I also love staying at home, having a beauty day putting the kettle on and watching some Netflix all cuddled up especially in the winter it just sounds like music to my ears. Although I agree, getting fresh air is a key point. Some mornings swinging by the coffee shop and going straight by the thames and meditating for a while can be more soothing than having a lie-in and staying warm in bed, plus it's good to take time to just think away from technology. It so peaceful and nice to have this place close to where I live, but anywhere will do just be outside and just try be one with nature for a bit.
DO WHAT MAKES YOU HAPPY:
I'd be the first to say that work can be soul sucking it doesn't leave you with a lot of time to do what you love to do. Me for one, blogging has been my passion for years and only at end of last year did I bite the bullet to actually get Live Elle to come to life, and she is a work in progress. (literally as she is me) As you are aware I did a month not blogging because of how stressful life got, I wish I would have blogged slightly along the way as I forgot the feeling that it gives me to be present here right now as I write this blog post. Although Pilates and Yoga has been mentioned as my exercise regimen they are also hobbies of mine which I have incorporated and that make me feel good so it's a win-win situation.
HAVE FAITH:
This has nothing to do with religion but holding on to faith sometimes can be more powerful and consoling than you think. You can't always plan what happens as much as you are not in control of what happens next, although your attitude towards life can make things better. What is meant to be will always be so let go and hope for the better, holding on to stress might not be the answer in getting better always try look at the positive side of things. Again it's a challenge but know that in the long run it won't change the situation but it can help immensely. Last but not least, don't forget to love, loving ourselves is more challenging sometimes than loving someone or something else, so do what it is that makes you feel good and happy, the way we treat ourselves is the way we treat others. Every one is fighting a battle of their own that we know nothing about so always be kind to those around you and shed a little bit of positivity. which I hope I've managed to play my part by writing this and sharing this with all you!
