WHAT'S FOR BREAKFAST?

Although my coffee is pretty much a staple first thing, I like to switch round what I eat in the morning. It's usually once I'm sipping through my coffee do I decide what's on the menu. Breakfast is known to be important we're all aware, but it also happens to be my favourite meal of the day - give me breakfast for lunch or dinner anytime ....Eggs, turkey bacon, waffles, pancakes.... mmmm OK i'm getting carried away here! I believe that how you start your day, is how you set your whole entire routine. I always like to keep things interesting when it comes to breakfast and this morning I decided to make a chia pudding with mango and peach, just the thought of it sounded amazing but the taste is just even better believe me on this.
CHIA PUDDING WITH MANGO & PEACH
- x1 natural yoghurt pot (you can use soy or coconut yoghurt to make this Dairy free)
- Chia Seeds
- x1 Mango
- x1 Ripe peach
- x1 mixture of nuts and seeds of your choice
- x1tsp of honey
HOW TO:
It's quite simple you have to start by mixing your yoghurt and chia seeds together, the amount of chia seeds you put in depends on the texture you like your pudding. I added about x2 tbsp worth (which didn't make it super thick nor liquidy) and stirred with a drizzle of honey. Once you've mixed it all together, just put the mixture in the fridge for about 20 minutes to allow the chia seeds to swell. In the mean time, I usually just prep my fruit, dice them up and the time would already be up, so it really is not much of a waiting period. However, in the worst case, you could do this the night before if you're in a hurry, I'm yet to try that my mornings seems to have gotten a little less crazy!
Right on to the toppings, what fruit you decide to put in really depends on what you have in your fridge, and your taste buds. I happen to have peaches and mango at the moment. I've been craving fresh fruit lately and well I think I have just added something else to start craving in the mornings!
I garnished it with a mixture of nuts and seeds I put together, I mixed in some chopped up hazelnut (AMAZING) walnuts, & pumpkin seeds. This mixture is always ready for when I want to add it in my porridge, yoghurt, on a toast or even in my salads for an added crunch the options are endless and I do recommend to keep a stash of different seeds and nuts on hand in your kitchen, you'd be surprised how much more you use them once they're all combined together!
I have yet another long day and I know that chia seeds will keep me full for longer. I am digging in to this beauty whilst I write this post, the sun came out so I'm soon going to go for a run, in which this pudding works well as a pre (or post) workout meal.
Also, Can I just express my gratitude at how I happened to find a long teaspoon in my kitchen. Otherwise this would have been so much harder to eat with a regular teaspoon, although I would have still been up for that challenge!
