What I ate Wednesday (7/12/16)

As most of you might be aware, I came back from a two-week holiday on Monday a. So much food was involved when I was back in Malta - & now I'm determined to get back into a healthy lifestyle, just to feel and look good over all, with work these couple of months, it has side tracked me completely from my old routine and it is my aim to get back into my old habits and be as organised as possible. I'm not going to stay waiting for the new year to come around, because that will just be one more excuse not to get started.
BREAKFAST:
My go-to breakfast has always been porridge, it's been a ritual for quite a few years now. I love this heart warming dish however, with my job lately I have lost the habit & gone for a quicker alternative such as toast which accompanies my on-the-go coffee. Porridge is not at all a complex thing to make - but I hate rushing to wolf down my food & well toast is more accessible to take with me & eat whilst on my way to the bus stop. The last x2 days however, I introduced porridge back into my diet and I forgot how good it makes me feel, plus it kept me going throughout my morning, which is amazing if you've a busy morning/day ahead, I definitely recommend porridge to keep you on track, it also helps stabilise your sugar levels and doesn't make you snack as much which surprisingly yesterday I didn't, I always add cinnamon with this and my toppings vary sometimes it's berries other times seeds & nuts.
LUNCH:
For lunch I was trying to stick to something light, yet just as tasty. I was craving eggs on toast, and for the first few days after coming back from holiday I'm trying to de swell slightly, so I thought of having my egg & avocado minus the toast - I am a carb queen and I cannot do without bread & pasta. But I have to admit, as far as this salad went, it was delicious & no carbs were needed for this dish & it still managed to satisfy my craving. It was so light, yet rich in flavour, and the turkey bacon just gave it a nice touch. I ought to make Tom try this, if he doesn't run away at the sound of 'salad' - he'll love it!
After my meal, I washed this down with a green tea - I try not to drink during I eat as it is not good for bloating, but afterwards helps with digesting!
DESSERT x1:
I usually like to finish my food with something sweet, this usually varies, I sometimes take 20gr of lindt dark chocolate, or a date or other times something naughtier such as a mini snickers or a cookie, I decided to end my meal with an Activia Yoghurt - Mango flavour which is still a treat as it contains a small amount of sugar, yet it's not the worst of things. (I usually with go for an all natural yoghurt and add my own fruit such as goji berres)
TEA TIME:
I have to admit, unexpectedly I did a whole morning of watching Christmas movies and I loved every second of it, I got super cosy after lunch and I could have stayed an hour or two more. However, I needed a little pick me up during the afternoon to give me a boost to get a workout in and to get the the rest of my to do list done. so I decided to make a an espresso macchiatto, my friend brought me back Greek coffee when she went on holiday & I was so excited to try it - it is super good. I also had a banana to keep me going until dinner time.
DINNER:
For din-dins I made Teriyaki Salmon w/ Avocado & Sautéed Spinach, on a bed of rice with Pilau seasoning (I love love love Pilau seasoning on rice) & topped off with sesame seeds. it's so simple to and a perfect midweek meal - it's super fast to make so comes in handy when you can't spend long in the kitchen, just marinate the salmon in soy sauce with a tsp of sesame oil ahead of time and then just grill in the oven for 20-25mins, in the mean time boil the rice and once thats done add small amount of butter with the pilau seasoning, add it into a bowl & last layering - finish off by adding any veggies of your choice to make this dish tastier. I always pair salmon, spinach and avocado together, they just compliment each other so well!
DESSERT X2:
To end the evening I made myself a women's tea from the yogi brand - I love their inspirational quotes that I get to read every night. I also had one cocoa & yoghurt biscuit of Belvita, which I didn't manage to take a photo of. (Tom and I shared the packet, there are x2 inside)
What did you guys eat today? My fave meal today was by far my turkey, egg salad - although, my dinner was also super tasty - - I love days like this where I have more time to cook my fave meals!
