Low Carb Tortilla Pizza

I seriously don't see the days go by anymore between work and trying to have a social life it can really take you by surprise, on busy days (which is often lately) I don't really have time to cook and my first instinct would be to get a takeaway - my go to is always a pizza choice but let's just say it's not always affordable to eat out all the time
a) For the waistline
b) On the piggy bank.
Coming home to this tortilla pizza especially after a long day at work - hits the spot nicely. Let's be honest we don't always feel like cooking when we have other things on our mind and this requires minimal preparation and cooking time is under five minutes tops. I always crave a good pizza at least once every two weeks, it's in my nature to eat Italian foods and it's definitely one of my favourite foods - I'm original huh? I'm sure I share the same love with many of you, and sharing is caring so for those of you who aren't aware - I'm introducing you to the pizza wrap.
This makes up for a great midweek dinner, when you want something delicious yet still keeping you on track. Sure, you can just buy an oven pizza but this in my opinion is definitely better in taste. I'm not saying with this you'll never crave or want an oven or proper pizza again but it is so fast to whizz up and it's my preferred choice plus with fewer calories so win- win. It is so delicious and healthy that it allows you to enjoy this more often with pleasure and zero guilt, go ahead and make two if you're hungry! You get to enjoy more for still half the calories of a normal pizza.
You can use corn wraps to have this gluten free which is amazing for those who are cutting out on gluten and as far as toppings go it all depends on what tickles your tastebuds. For me I just love a margherita with added green olives and mushrooms. I just love the combination of the two together - it is usually my go to order - make sure to keep that in mind if you ever want to bring over pizza and win me over - on a serious note, experiment with toppings - it's super good, super yum and if you haven't tried this yet you should.
INGREDIENTS:
SERVES ONE
x1 Tortilla Wrap
x1 Chopped tomatoes
(or pomodoro sauce)
x2 Mushrooms (Sliced)
x3 Green olives (Sliced)
x1 Handful of grated mozzarella
DISCLAIMER: Due to the wrap being thin I recommend a dry mozzarella, so that it doesn't weigh down and sog the tortilla further which will enable you to lift it up.
Before prepping your pizza go ahead and preheat your oven to 180 degrees.
HOW TO:
Get your wrap and start by adding your tomato sauce as your base, you want to cover enough but not over do it either not too make it too heavy. I love using chopped tomatoes as I feel it gives it just that something extra in taste.
I like to layer my toppings, by adding some shredded mozzarella and a few slices at the same time to get the right ratio of toppings versus the cheese.
I garnished the top with the green olive slices and fresh basil and parsley. I would have used oregano fresh or dried if I had any which is the signature herb for pizzas - I obviously forgot to buy, although let me say you won't even realise the herb is absent but it can only compliment this dish even more.
Just add it in the oven for literally five minutes. I would keep an eye on it as you want the tortilla to golden a bit and get hard but you don't want it to burn either which is very possible to happen in a flash!
Just dig in & enjoy.... You might have thought that this doesn't count as a real pizza because it doesn't have the same effect as the real thing - here is proof that you can pick it up with your hands and eat it like a real pizza too. Obviously just keep in mind you can't go to heavy with toppings as the more you add the more you will weigh it down. As far as the taste goes it's ALL there!
